This hearty stew is perhaps Madrid's best known dish. It's a perfect all-in-one dish, great for cold winter days. It has humble origins but, little by little, it began to gain popularity across the social spectrum. The main ingredients of this stew are chickpeas with meat and vegetables. It is served in small bowls called "vuelcos": the first vuelco has the stock, the second the chickpeas and vegetables and the third and last has the meat.
